GLENNY’S GOAT CHEESE RECIPE
1 Goat Cheese Log
Several Heads of Garlic (as many as you can tolerate)
Lots of Olive Oil
1 container of red and yellow cherry tomatoes
1 can of green olives, no pits
Crackers or Toast Bites
How to Prepare:
Preheat oven to 400 degrees. Cut off the tops of the garlic heads to expose the garlic heads. Place the garlic in a oven ready dish and drench the garlic with olive oil. Roast for about 30 minutes depending upon the number of heads. Then add the red and yellow cherry tomatoes, olives, and roast until the tomatoes are soft. Remove from oven and place goat cheese on a plate and cover with the roasted concotion. Serve with crackers or toast bites…and lots of red wine!
